		<description><![CDATA[Just made this today from the James Peterson Sauces book (updated 2008 version)also. :)  In this reference Peterson says you can substitute roundfish or flatfish if Sole is unavailable. I used Trout in this case with a Californian Pinot Grigio. The wine tasted slightly  &quot;sweet&quot; but when cooked with the egg yolks to make the sauce, suprisingly it did not come across as &quot;sweet&quot; in the dish.
 It was actually well balanced.(Made it taste like a few drops of lemon were slightly added.) I also cut back on the butter too lol! 4 Tablespoons over here as well. Its a great recipe. will make again]]></description>

If you don&#039;t, you will end up destroying a hundred-dollar double batch of bisque by making it taste too much like Hennessy :)  I ended up with a huge plume of flame on my stove (probably used a pan that was too deep... not enough surface area for the booze to burn off), and then a legit fireball when I dumped the still burning pan into the soup.
